Samak Chawal is a nutritious millet traditionally consumed as a rice alternative. Despite being called “chawal,” it is not regular rice; it is a type of millet known as Barnyard Millet. Its small grains have a mild, pleasant flavor and can be cooked in a similar way to rice. It is particularly popular during Navratri and other fasting periods and can be used to prepare Samak Khichdi, pulao, porridge and kheer. It is naturally gluten-free and can be included in a varied, balanced diet.
